- Wushe Mountain [elevation 1,500m / 4,922 feet above sea level], Nantou County in Central Taiwan is a picturesque region famous for its high quality tea, especially Oolong and White tea. High elevation tea
- Cultivation Notes:
- Da Bai first flush leaves are hand-picked in the first few days of Spring
- Fresh jasmine flowers from nearby fields are also hand-picked at the same time to be used in scenting the tea leaves as they are air-dried.
- Processing Notes:
- The making of Organic Da Bai Jasmine White Pearl is a labor intensive process.
- The standard bud and 2 leaves are harvested on the first days of Spring, right after the last winter frost.
- The leaves are naturally and lightly wilted to develop the sweet aroma.
- After the initial wilting process, organic jasmine blossoms from the same growing area are mixed in with the tea leaves at a 1 : 1 ratio.
- When the blossoms have given up their scent, they are manually removed and replaced by fresh blossoms.
- This process is repeated 7 times.
- The leaves now undergoes a final drying, then tightly rolled into pearls.
- This long and laborious process results in a natural, soft but long- lasting jasmine floral aroma.
- Tasting Notes:
- Deep and long lasting aroma of jasmine and orchid.
- Sweet aftertaste refreshingly balanced with light astringency with a subtle edge of astringency.
- The jasmine aroma lasts, and lasts, and lasts... through up to 7 steepings.
