- Li Shan (Pear Mountain), is the highest tea growing region in Nantou , Taiwan. Small family-owned Oolong tea gardens lie between 1,800 meters / 5, 900 feet to 2,000 meters / 6,500 feet above sea level.
- Cultivation Notes:
- First flush tea harvested from high altitude ( 2,000 meters above sea level) family-owned tea garden.
- At this altitude, bugs and other pests are not an issue, therefore there is no need for pesticides
- Processing Notes:
- Immediately following harvest, a complex process comprised of 6 essentials steps turns raw tea leaves into an aromatic Oolong with deep, smooth, satisfying taste:
- Withering to develop floral, fruity aroma
- Tossing, shaking to lightly bruise the leaves to allow for oxidation
- Oxidation Level: 10% [Typical range for light oxidation level is between 10% and 25%]
- Pan-frying to halt oxidating and preserve green color
- Rolling to remove moisture and enhance aroma
- Drying to further remove moisture and fix aroma and taste
- Immediately following harvest, a complex process comprised of 6 essentials steps turns raw tea leaves into an aromatic Oolong with deep, smooth, satisfying taste:
- Tasting Notes:
- Sweet, fruity / peachy notes, followed by a floral aroma of citrus blossoms.
- Prolonged sweet after-taste with no detectable astringency or bitterness.
